Wild Boar Bacon & Brussel Sprouts


  • 6 slices wild boar bacon (or regular), chopped
  • ¼ cup shallots, thinly sliced
  • 6 cloves garlic, thinly sliced
  • 1 ½ pounds Brussel sprouts, trimmed & halved
  • salt, to taste
  • pepper, to taste
  • ½ cup chicken stock
  • 1 tbls fresh lemon juice
  • ½ cup grana Padano parmesan cheese, grated
    Total time: 20mins
    Servings: 6


Heat a large nonstick skillet over medium-high heat. Add bacon, and sauté for 5 minutes or until bacon begins to brown. Remove pan from heat. Remove the bacon from pan (discard half the remaining drippings)

Return pan to medium-high heat, stir in bacon, shallots, and Brussel sprouts; sauté 4 minutes. Add garlic, and sauté for 4 minutes or until garlic begins to brown, stirring frequently. Deglaze with the chicken stock and bring to a boil. Cook for 2 minutes or until the broth mostly evaporates and the sprouts are crisp-tender, stirring occasionally. Remove from heat; stir in salt, pepper and lemon juice. Garnish with parmesan cheese. Serve.
